Sweet Potato Casserole used to be the thing that I dreaded most at holiday meals. The smell of it was so gross and it was so sweet and gooey (marshmallows) and nothing you did to doctor them up took away that "squashy" taste (in my opinion). My dad absolutely loved them so my mom made them every year. And I'm sure that they were very good if you were a sweet potato fan. This year, I finally found a really great recipe that I made and took to our Urban Tribe Thanksgiving dinner. I actually took ingredients from 3 different recipes, combined them, substituted things that I had on hand, then baked it, praying it would be solid in the middle. If you choose to, you can make this delectable treat entirely from organic ingredients.
